The memories are still strong when I was taken out to Zapopan , nice town and had lunch on the road at Birrierías Chololo with goat meat and beers Indio oscura. An institution in the area, they are at Carretera Guadalajara – Chapala Km 17, El Capulín, The best I have tried !!! Apart the service is excellent, the very friendly waiters. Everything is delicious, make you cry with happiness. It is close to the airport, so I recommend that when you arrive go to Chololo, I did it the other way from Tepatitlán de Morelos (see posts)! This restaurant is an institution with the preparation of this singular Birria has been transmitted from generation to generation for more than 100 years. Javier Torres Ruiz, “El Chololo” , the founder/owner died on Tuesday, February 18, 2016 just after my last visit. He currently has two branches: one on the road to Chapala and the main in San Pedro Tlaquepaque , The formula in the kitchen was inherited it from his own father, Colonel Isidoro Torres Hernández, The place rightfully so received many celebraties that many reading may not know but believe me they are very popular there and abroad such as musicians and sports , even politicians. Some of them are singer Marco Antonio Solís aka El Buki ; Jorge Arce el Travieso or naughty, the singer Ana Barbara, and Enrique Cuenca, one of “one of” Los Polivoces ” , the goalkeeper Chuy ”Corona“ « Caballo » Rojas, Enrique Iglesias, Lucha and Jorge, the football/soccer players Daniel Guzmán, Adrián Chávez, Daniel Osorio, Pancho Barraza and others, “ Chololo ”Larios and other boxers and Jorge Jorge Arana, and Miguel Castro, Arturo Zamora, among other politicians are just some of the clients that Birriería Chololo has had throughout their years of history. Javier Torres Ruiz , the founder/owner , also crossed the Atlantic to land in Rome: it was just in the Vatican where he was able to shake the hand of Pope John Paul II. The Virgin of Zapopan, who around August of each year enters the premises during her passage through the area. There, the blessing is kept about half an hour, El Chololo’s team makes the corresponding prayers so that later “La Generala” (female general) continues its route.

The town of Zapopan in the northwest of the city of Guadalajara, communicated with it by two roads: the first of them was heading towards the south-east of Zapopan, crossed the Columo stream and entered by the western part of Guadalajara;the roads 44 and 23 we took, The second to the left east of Zapopan, crossed Zoquipan and Atemajac, then entered the northern part of Guadalajara via the Mezquitán district.

The town of Zapopan is part of the State of Jalisco in Mexico, adjoining that of Guadalajara. The city is known for its basilica and its old center. One of the main tourist attractions of the historic center is the Zapopan basilica, a Franciscan sanctuary in Baroque style completed in 1892, which houses Notre-Dame de Zapopan. Also, the parish Church of San Pedro Apóstol , that was erected in the year 1600 due to the need to give spiritual care to the population. San Pedro Apóstol has been the patron saint of this temple since 1878, If you have time walk on the Paseo Teopiltzintli, which was formerly the main street of the city, See the Arco of Ingreso, built by the Spanish founders of the city. It is made of a stones and measures 20 meters high. The arc is decorated with sculptures and surmounted by large jugs and an eagle. The Paseo Teopiltzintli leads to the Plaza de Las America, after having pass the Plaza Cívica. The Plaza de Las America-Juan Pablo II is located opposite the Zapopan basilica and its sidewalk is made of rose stones. It has a metal kiosk ,and four large fountains. There are also two large bronze sculptures representing the god and the goddess of corn.
A bit of history I like tell us that Zapopan began between 1160 and 1325, when a large Tnumber of Zapotèques, Nahuas and Mayas arrived on the current territory of Zapopan, near Deep Creek, these groups came from the south in search of a colony. Over the years, the inhabitants have involved other tribes, such as the Aztecs who were heading towards the Mexico valley; However, the Tecuexes are those that have dominated the area over time. Under the name of Tzapopan it was founded by Aztecs and Tecuexes. The conquest of the city of Tzapopan began around 1530, the year during which Nuño de Guzmán conquered the kingdom of Tonalá , although the city was probably insignificant or even depopulated, he key to the foundation of Zapopan is linked to the image of the Virgin. Since the conquest of Tenochtitlan, the Spanish had ordered to replace the images of their gods in the sanctuaries of the natives with images of the Virgin; As in all the sanctuaries in the center of the country, Michoacán and during the conquest of the North and the North West. Although the legend recalls the virgin of Zapopan as a peacemaker in the wars against the natives, Zapopan, and its indigenous people, was the seat of its most famous sanctuary in all the west, It was part of the province of Nueva Galicia, in the kingdom of Nueva Galicia between its foundation and 1786, and of the Intendencia de Guadalajara from 1786 to 1821. In the first model of territorial organization of the State of Jalisco of March 27, 1824, designated as a plan of the political division of the territory, Zapopan is a state department and the city of Zapopan was proclaimed Head of the department and named Villa or town on November 18 1824, In 1857, with the Liberal Republicans in power, Jalisco was a state and Zapopan was a department attached to the first canton of Jalisco.
