A beautiful City of my dear Spain, Zaragoza is for many a place of passage.(indeed for me for many years) It is just three hours from other great capitals such as Madrid, Barcelona, ​​Valencia or Bilbao, so whoever visits it usually does it as a stop on a longer trip or as a day, fleeting just some of its charms. And one we do once in a while as per the recipe of our grandparents is the Fabada Asturiana or Asturian stew ! Love it, The night before, soak the fabes (special beans) with plenty of water since they swell a lot. Drain the fabes, discard the water, and place in the casserole where we are going to cook them. In a pot, we cook the fabes in water with the onion and the bacon; past 90 minutes. We put the chorizo ​​and the morcilla (sort of black pudding). We continue to cook until the fabes are tender. peeled, leave in half. Add the onion and bacon.Put in the casserole with the cold fabes, with the fire still off. Wet the ingredients with plenty of water, and start with cooking. Cover and cook a minimum one hour. After an hour, scare the fabes: interrupt cooking with a glass of cold water. Cover, remove and continue cooking. In the last half hour of cooking, add the sausage to the fabada. And the black pudding after a couple of hours of cooking, rescuing the onion and putting in a blender glass.
