One of the oldest stories in ‘Tell me a story’ is ‘The Cage of the Tigers’, written by Manuel Carretero in the aforementioned magazine in 1907. Tomás Borrás Bermejo published ‘The Three Wise Men’ in 1935, with evocative drawings of Máximo Ramos, one of the most prominent names in the ABC Collection. Aroma de Romerois the title of the large-format book that Arjona has just published as a tribute to maestro Curro Romero (Francisco Romero López) on the occasion of his 90th birthday. Arjona is the brand of four generations of bullfighting photographers, whose archive brings together millions of snapshots, a graphic history of bullfighting from the first third of the 20C to today. A bunch of 150 photos make up this new publication that traces the career of the Pharaoh of Camas and aims to be a gesture of admiration, friendship and respect for a bullfighter intensely linked to the family. It all started with Agustín González Arjona, born in 1888, a cartoonist, portraitist and bullfighting fan, who immortalized the bullfighters of the first years of the last century on glass plates, and transmitted the emotion of the bull in the bullring to his son Pepe. In 2015, the first came to light, Arjona, a century of bullfighting moments; in 2022, José Tomás, the bullfighting of a myth; in 2023, the one dedicated to Curro, and four yearbooks on the 2017, 2018, 2019 and 2020-22 seasons with the most notable milestones of those years. This one is popping up all over in my Madrid, no my list, Rosi La Loca, Calle Cadiz, 4, one of the most fun and visited restaurants in Madrid Without culinary genes, it was Sandro, the young man who took care of his grandfather, who taught the owner then 10 or 12 years old to navigate between fires and pans. He had a very good hand; in fact, today he lives in the United States and is the head chef of a restaurant. He studied (dining room and kitchen) at the Hotel Escuela de la Comunidad de Madrid; then he did a master’s degree at the Autonomous University and went through a high-class catering service Zalacain, where he spent six years- which he combined with other jobs in the kitchen. He spent two summers in San Pere del Bosc (Lloret del Mar, Gerona), where he met Harry Wieding, his other teacher in the kitchen. Then came Estado Puro, by Paco Roncero, with whom he learned a lot about organization and management; the NH hotels, a vegetarian; a month on unemployment and, finally, Rosi La Loca opened in November/December 2014 and Sandro joined shortly after,in 2015 ; they are served by a staff of 40 people, 13 in the kitchen. This year they have produced the second best patatas bravas in Spain and the second best tortilla in the Community of Madrid, in two competitions. Owner Javier is also the executive chef of Lovo Bar. and Calle 365, also from the Rosi La Loca World Group, to which the restaurant-cocktail bar Inclán Brutal Bar belongs; Boom Boom Ciao, a dining room opened a few weeks ago, both in Madrid , and Calle 365 in Alicante. La Pastelería Mallorca, where Bernardino Moreno opened the first location in 1931; Today the fourth generation takes the reins of this family business and opened the first Pastelería Mallorca location on Calle Bravo Murillo. It is a few minutes past 7h30 in the morning; It has been a while since the brothers Jacobo (33) and Pablo (30) Moreno, production managers, have arrived at the warehouse on Calle de la Barca, the central workshop for five years. The hustle and bustle began hours ago for Pablo, who studied business administration and when he put his head into the pastry business he trained in New York; Jacobo, who graduated in Law, did it in Switzerland, in the hospitality industry. Before joining the family business, both worked in other pastry shops and restaurants. Today, the website’s turnover represents 50% of the total. At the head of production in store workshops is Yolanda Arévalo (38), who after finishing Business went to Paris to train at Le Cordon Bleu, Webpage : https://www.pasteleria-mallorca.com/
Tips for differences between bull, cow, steer and calf. The first thing is to talk about age. If the animal has not yet reached 12 months of age, we will be looking at a calf . From then on we must consider him a bull or a heifer. If it is male, it will go from being a steer to a bull if it is not castrated. If he is castrated he will become an ox at four years old. The second has to do with color. The white color is the most characteristic of calves. When they become steers, the meat turns pale red. As for beef, it is usually red; and that of the bull acquires a dark red tone. Finally, beef is usually very intense red, with streaks of infiltrated fat. If we stick to the size and weight, the calf and steer can reach a weight close to half a ton. In the case of the cow, a little more: 600 kilograms. The bull and the ox far exceed that weight. And as for the flavor (although this depends on each person’s taste), the beef usually has, according to those responsible for the Leonese restaurant El Capricho, a soft, tender flavor with nuances of dairy flavors. On the other hand, the beef begins to have a more pronounced and intense flavor. Beef meat has a much stronger flavor, while bull meat is intense and coarse, adding that ox meat is differentiated from the others by its sweet and mild flavor, with a tender and juicy texture. Finally, several explanations referring to the beef, highly appreciated for its flavor and texture. To be considered an ox, 48 months must pass. The ox, unlike the bull, does not have the capacity to reproduce after having been castrated from the first year of birth. Its meat is one of the most appreciated, also due to its scarcity. There is nothing comparable to the taste of an authentic Ox beef steak Agree!!! And if you want to go to the root like I did once here is your El Capricho webpage : https://bodegaelcapricho.com/en/origin/
